Sherry cask finishing involves transferring whisky into casks that once held sherry, such as Oloroso, Palo Cortado or Pedro Ximénez. As the whisky rests, it draws flavour from both the wine-soaked wood and the sherry itself, adding sweetness, depth and a rich layer of dried fruits, spice and subtle nuttiness. The result is a more complex and refined character, enhancing the whisky’s overall richness.
